Frequently Asked Questions

What flour blend do you use?

We use a custom flour blend of organic white rice flour, organic brown rice flour, organic tapioca starch and organic potato starch.

What oils do you use?

All of our breads are finished with organic olive oil. English muffins are pan-fried and pans are seasoned with organic avocado oil.

How do you sweeten your baked goods?

We activate our yeast with a small amount of organic cane sugar. Sweet breads are finished with either honey and organic olive oil or organic agave and organic olive oil.

Do you use gluten-free wheat starch?

No! The only binder for all of our products is organic psyllium husk. We do not use wheat starch or gums in our products.

Do you offer potato/nightshade free options?

Currently, all of our products contain organic potato starch. We are testing out flour substitutions to see if it’s possible to make our baked goods potato free - stay tuned!

What does mostly organic mean?

All of our ingredients are organic except yeast (the only option we’ve found for organic yeast contains wheat!), kalamata olives and salt (which can’t be certified organic by the USDA). All other ingredients used in our baked goods are organic.

How do I pre-order baked goods?

Please sign up for our mailing list to be the first to know when pre-orders open!

Do you take special orders?

Yes! Please reach out via our ‘Contact Us’ form to place your special order.

Why are bagels so much more expensive than other baked goods?

Gluten-free bagels have a more complicated process than other baked goods. Due to the limited stove and oven space in our home, bagels take significantly more time to make.
